Goals for List of Spices
While shopping at an Asian market I saw fresh spices I had never seen before. I have cooked professorially for about 20 years and so was a little surprised. I started to search the web and came up a dissatisfied.
Many times it was a alphabetical listing with 1 line of information about the spice. Other times it was the scientific name with some general information.
Another thing when I talk about spices, I will include herbs. In many conversations this 2 terms are interchangble.
What I hope to do is divide the information into regions. Then list the spices from this region with 1 or 2 recipes and in the future pictures. I want to give you an idea of when you would use the spice and how its flavor blends with other spices.
I will also describe the most common spice mixes and whats in them and how you would create these mixes from single spices and sow you how to create your own variation.
I want not only to create a list of spices but want to show you how they reflect and influenced the cultures they come from.
In the culinary world we now are entering a fascinating era as cooking is now a mainstream topic. We are seeing flavors from the whole world being combined in new ways.
